Poachers Cookery School
Established in 2014, Poachers Cookery School is headed up by Poachers Seafood Restaurant Head Chef and Owner Barry McLaughlin. Focusing mainly on cooking fresh local Fish and shellfish, we run private classes for groups of 12 or upwards. Our classes really will have something for everyone – whether it’s an introduction or brush-up course for yourself or a lovely gift for someone. Barry, who has featured on RTE’s Today programme, personally presents in an informal & fun style to home-cooks of all levels, with particular emphasis on cooking Seafood dishes. At each class all students will be given a full cookery demonstration, a copy of the recipes demonstrated and, very importantly, an opportunity at the end of the class to taste the food that has just been cooked.
Private classes for groups of 12 -24, please enquire about availability.
- Demonstration & Tasting – we provide a full cookery demonstration with printed recipes along with full tasting of the 5-6 dishes we cook. Minimum 12 and maximum of 24 people required
- Demonstration only – Full cookery demonstration with printed recipes. Minimum 25 and maximum of 50 people required
After-demo dining option for your party in our Michelin-recommended Restaurant with fully licenced Bar & Cocktail list.

- Seafood Masterclass – learn to cook Seafood with confidence and without fear with our Head Chef & Owner Barry McLaughlin. Showcasing a variety of cooking techniques and a great range of locally caught Seafood, you will be in good hands with one of Ireland’s best-known Seafood Chefs.

- Healthy but Soooo Tasty – We are all so conscious of eating well these days and sometimes at the expense of great flavours. No need we say!! Refreshing Superfood salads, low-calorie Fish & meat dishes with flavour-packed vegetables & healthy mediteranean-inspired fresh sauces are to the fore in this class.

- Classic & Contemporary Desserts – Like making sweet things for special occasions? If you like Sticky Toffee, Brownie, Chocolate Fondant, Meringue Roulade, Pannacotta, Tarte Tatin, flavoured ice cream then this is the class for you. We’ll take you through the steps of making these great desserts that we make regularly in our Restaurant Kitchen.

- Tapas & Party food – Welcoming Family & Friends around for nibbles is great fun and we all want to make a good impression (translation = have them raving about it afterwards) . Make sure you are armed with some “go to” headache-reducing party food that have your guests begging to be asked again. We’ll be covering great versions of Sticky Chicken wings, mini Crab cakes, your very own cured Salmon, Patatas Bravas, fresh Scampi, Chicken Liver pate, Hummus, baba ganoush.

- Bread Making – We bake lots of bread at Poachers and in this class we bake and cook our famous Wholemeal Brown bread, Brioche, flavoured Foccacia, Ginger bread and a cracking Pizza.
